One More Ham Recipe

Last leftover Ham recipe:

MINI QUICHES

Ingredients:
4 eggs
1/2 cup shredded cheese (Swiss or cheddar)
1/2 cup diced cooked ham
2 green onions chopped
salt and pepper to taste
1 pkg. refrigerated crescent rolls
Miniature muffin pan

Preheat oven to 350 degrees. Flatten out crescent rolls into
one large rectangle and cut into small 2-inch squares. Spray
muffin pan with non stick cooking spray and gently push squares into
muffin holes to form small cups. Beat eggs, add other ingredients and blend well.
Fill muffin pastries with egg mixture and bake for about 12
minutes or until tops are golden brown. Best when served warm.

Another Great Recipe

This recipe uses some of your ham bone stock.

 

Creamy Ham and Corn Chowder Recipe

 Ingredients:1 cup chopped or diced cooked ham2 cups ham broth
4 tablespoons butter
4 tablespoons flour
2 cups milk (whole milk preferred)
1 1/2 cups frozen corn or 1 (15 ounce) can corn
1 tablespoon dried onion flakes or 1/4 cup freshly minced onions
1-2 clove garlic, minced
salt and pepper, to taste
paprika, to taste

1.  Melt butter in a large pan; remove from heat and mix in flour until smooth.
2.  Slowly add 1 cup milk, stirring constantly.
3.  Return pan to stove and cook on low heat until milk thickens.
4.  Stir the corn, the ham pieces, dried minced onion, and
minced garlic into thickened milk; then slowly stir in the remaining milk and
the ham broth.
5.  Cook on low for about 15 minutes, but do not boil.
6.  Add salt, pepper, and paprika to taste.

Optional: you can add a cup of cooked, chopped potato chunks to the soup near
the end of the cooking, if you like

Easy Ham Recipe

This is a great recipe for some of that leftover ham. 

Ham and

Swiss Crescent

Roll

Ingredients:

About 2 cups cooked ham, diced

½ cup frozen broccoli florets, thawed (can substitute green beans)

¾ cup shredded Swiss cheese

1 small can sliced mushrooms, drained (or use fresh mushrooms)

¼ cup mayonnaise

1 ½ tsp poupon or honey mustard

1 can refrigerated crescent dinner rolls

¼ cup silvered almonds

1 egg white

 

Directions:

1.  Heat oven to 375 f. Spray cookie sheet with nonstick cooking spray.  In medium bowl, combine ham, broccoli, cheese, mushrooms, mayonnaise and mustard.  Mix well.

2.  Unroll crescent rolls

3.  Spoon and spread ham mixture onto center of each crescent, leaving about ½ inch dough on all edges.  Roll crescent and pinch the edges shut.  Place rolls on baking sheet, and brush each with egg white.  Sprinkle with almonds.

Bake at 375 for 25 to 30 minutes or until deep golden brown.  Serves 4

Make Ham Stock

If you don’t have a slow cooker… next time they come on sale, go purchase one.  So many recipes can be adapted to use in a slow cooker, and no matter how busy you are, a meal is easy and painless when cooked in a slow cooker.  If you had a ham for Easter, cut all the meat off the bone, and put the bone in your slow cooker.  Add enough water to cover.  If you have a freezer bag full of vegetable scraps dump those into the slow cooker as well.  If you don’t, add washed onion skins, carrot peelings, celery tops… whatever you have handy.  Put the cover on, and cook on low for 8 to 24 hours.  You may need to add more water after about 8 hours.  Don’t add too much, the object here is to get a flavored condensed broth from your ham bone.  This can be done in a large stock pan on low heat on your stove top… you just can’t leave it simmering overnight.  When the stock is finished strain out all the bone and veggie scraps and either refrigerate, freeze, or start cooking with the beautiful stock.

By the time you get home from work, everything is thawed and ready to be cooked.
